Duo Tomatoe & Avocado

Tomatoe & avocado Gaspacho

2 lbs of fresh tomatoes
1 garlic clove
1 large cucumber
1 green pepper
1/2 white onion
3/4 cup of olive oil
1/2 tsp ground cumin
1/4 cup red wine vinegar
salt and pepper


In a blender, mix all the ingredients until a creamy and smooth texture.
Serve cold and top with fresh basil leaves.



nordic shrimps Ceviche

600 g of Nordic shrimp or Matane
Juice of 8 limes
1 minced French shallot
1 green pepper in cubes
1 seeded tomato cut into cubes
2 avocados in cubes
1/4 tsp of sambal oelek
2 tbsp chopped fresh parsley
2 tbsp. chopped fresh mint
2 tbsp chopped fresh chives
salt and pepper


Prepare all ingredients and place in a bowl.
Let macerate in the fridge a minimum for two hours before serving.
Place on a nest of watercress and serve with organic corn chips .
